- 2 small heads of Gem or Bibb lettuce, cut in half lengthwise
- ½ cup blue cheese or buttermilk dressing

8 ounces Cabot 2 Year Cheddar, crumbled
- ½ cup toasted walnuts, chopped
- ¼ cup chopped chives
Directions
- PLACE a half head of lettuce onto each serving plate, cut side up, and drizzle with two tablespoons dressing.
- SPRINKLE each lettuce “boat” with ¼ of the crumbled Cabot 2 Year Cheddar, walnuts, and chives.
