Ingredients
- Cooking spray
- 5 slices firm white bread
- ½ cup chopped onion
- 1 teaspoon olive oil
- 1 cup Egg Beaters or other liquid real egg product
⅔ cup Cabot Light Sour Cream
- 1 teaspoon chopped fresh thyme
- ½ teaspoon Dijon mustard
- ¼ teaspoon ground black pepper
- 2 cups cooked broccoli florets
2 ½ ounces Cabot Lite75 Sharp Cheddar, grated (about ⅔ cup)
1 ½ ounces Cabot Extra Sharp Cheddar, grated (about ⅓ cup)
Directions
- PREHEAT oven to 375°F.
- COAT 9-inch pie plate with cooking spray. Press first slice of bread into pie plate, with one edge even with top, firmly pressing it into corner to fit shape of plate. Press remaining slices in place to form single layer of bread slices, cutting to fit where needed.
- PLACE in oven for 10 minutes or until set but not browned. Meanwhile, combine onion and oil in small skillet over medium-high heat; cook, stirring occasionally, until onions are softened and lightly colored, about 5 minutes.
- WHISK together Egg Beaters, sour cream, thyme, mustard and pepper until no specks of white remain, in medium bowl.
- ARRANGE broccoli over bottom, when crust is baked. Top with sautéd onions, followed by cheeses. Pour egg mixture evenly over ingredients in crust.
- RETURN to oven for 25 to 30 minutes or until quiche is lightly browned on top and set all the way in center. Let stand for about 10 minutes, then cut into slices and serve. (Or serve at room temperature.)
