Made with Cabot Pimento Cheese, this grilled cheese is an amazing twist on the classic sandwich and is full of delicious flavor. Share the recipe on Facebook, Pinterest, Instagram, and Twitter and your friends and family will be glad you did.

To make 20 sandwiches, you’ll need 1 stick of Cabot Salted Butter or Unsalted Butter, 2 loaves of your favorite bread and 2 batches of Cabot Pimento Cheese (see recipe here). Begin by melting the butter in a cast iron pan, skillet, griddle or grill until it’s melted but not bubbling.

Place ⅓ cup of the pimento cheese on one slice of the bread, being careful not to spread it too close to the edges. When the sandwich cooks, the cheese will melt and fill the sandwich perfectly.

Cook over medium heat until the bottom of the sandwich is lightly browned, then carefully flip to the other side. When both sides are golden brown and the pimento cheese has melted, remove from the pan. Repeat until you’ve used up all of the bread and dig in!

Directions

  1. MELT about 1 teaspoon butter per sandwich in a cast iron pan, skillet, griddle, or grill until melted but not bubbling. Adjust the amount of butter used based on how many sandwiches fit in your pan or griddle.

  2. PLACE ⅓ cup of the pimento cheese on one slice of the bread and be careful not to spread too close to the edges. When the sandwich cooks the cheese will melt and fill the sandwich perfectly.
  3. COOK over medium heat until the bottom of the sandwich is lightly browned then carefully flip to the other side. When both sides are golden brown and the pimento cheese has melted and is nice and gooey remove from the pan and enjoy! Repeat until you’ve used up all of the bread.
