When you need a tasty sandwich that’s quick and easy to make, this pimento grilled cheese is what you’re after. Made with Cabot's Pimento Cheese Recipe, this grilled cheese is an amazing twist on the classic sandwich and is full of delicious flavor. To make 4 sandwiches, you’ll need 2 tablespoons of Cabot Salted Butter or Unsalted Butter, 8 slices of your favorite sourdough bread and 1 batch of Cabot Pimento Cheese Recipe.
Begin by melting the butter in a cast iron pan, skillet, griddle or grill until it’s melted but not bubbling. Place ⅓ cup of the pimento cheese on one slice of the bread, being careful not to spread it too close to the edges. (When the sandwich cooks, the cheese will melt and fill the sandwich perfectly.) Add 1/4 cup shredded cheddar on top of the pimento cheese.
Add the sandwiches to the pan and cook over medium heat until the bottom of the sandwich is lightly browned, then carefully flip to the other side. When both sides are golden brown and the cheese has melted, remove from the pan. Repeat until you’ve used up all of the bread and dig in!

1 cup Cabot Vermont Sharp Shredded Cheddar
Directions
MELT about 1 teaspoon butter per sandwich in a cast iron pan, skillet, or griddle until melted but not bubbling. Adjust the amount of butter used based on how many sandwiches fit in your pan or griddle.
PLACE ⅓ cup of the pimento cheese on one slice of the bread and be careful not to spread too close to the edges. When the sandwich cooks the cheese will melt and fill the sandwich perfectly. Add ¼ cup shredded cheddar cheese on top of pimento cheese. Top with second piece of bread.
ADD sandwiches to pan and cook over medium heat until the bottom of the sandwich is lightly browned, then carefully flip to the other side. When both sides are golden brown and the cheese has melted and is nice and gooey remove from the pan and enjoy!
