Need a light cheese sauce recipe that won’t let you down in the flavor department? Our Skinny Cheese Sauce is packed with deliciousness – you won’t even know it’s a light cheese sauce! Instead of half & half, lots of butter, and full-fat cheese, this “skinny” cheese sauce is made with 1% milk and Cabot Lite50 Sharp Cheddar. It’s a truly versatile sauce that can be used in pasta, or poured over broccoli or cauliflower. However you use it, it’s sure to bring your dishes to a whole new level, making them irresistible. Quick and easy to make, this sauce is convenient to whip up on any day, for any occasion! This recipe makes 10 servings, for which you’ll need: unsalted butter, canola oil, all-purpose flour, lowfat (1%) milk, Cabot Lite50 Sharp Cheddar (grated), and salt and pepper (to taste). You’ll start by heating the butter and canola oil over medium heat until the butter is melted. Then add in flour, whisking until smooth and bubbling – approximately one minute. Gradually whisk milk into the flour mixture, increasing heat to medium-high. Be sure to whisk constantly until the sauce simmers and thickens (around two minutes or so). Once the pot is removed from heat, add in Lite50 Sharp Cheddar and stir until completely melted and combined. Season with additional salt and pepper, if needed.

Ingredients

  • 1 ½ tablespoons Cabot Unsalted Butter

  • 1 ½ tablespoons canola oil
  • 3 tablespoons King Arthur Unbleached All-Purpose Flour

  • 2 cups lowfat (1%) milk
  • 6 ounces Cabot Lite50 Sharp Cheddar, grated (about 1½ cups)

  • Salt and freshly ground black pepper to taste

Directions

  1. HEAT butter and oil over medium heat until butter is melted in a medium saucepan. Add flour and whisk for about 1 minute until smooth and bubbling.
  2. WHISK milk into flour mixture gradually. Increase heat to medium-high and whisk constantly until sauce comes to simmer and thickens, about 2 minutes.
  3. REMOVE from heat and add cheese slowly, stirring until melted and blended. Season with salt and pepper.
