Turkey Lettuce Wrap Tacos

Ingredients

  • Cooking spray
  • 1 pound lean ground turkey or beef
  • 1 cup favorite salsa, plus more for topping
  • 1 (4-ounce) can diced green chiles
  • 1 ½ teaspoons taco seasoning
  • 1 (15-ounce) can corn, drained
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 head lettuce*
  • About ⅓ cup Cabot Lowfat Plain Greek Yogurt

  • Sliced olives (optional)

Directions

  1. COAT large skillet with cooking spray. Add turkey or beef, salsa, chiles and taco seasoning to skillet and place over medium-high heat.
  2. COOK, breaking up meat with spoon, until meat is cooked through and no longer pink, about 8 to 12 minutes.
  3. REMOVE from heat and stir in corn and beans.
  4. CUT off stem at base of lettuce for lettuce wraps, then cut head in half lengthwise. Peel off individual leaves, then wash and pat dry.
  5. SCOOP about ½ cup meat into lettuce leaf for each wrap; top with dollop of yogurt, additional salsa, and olives if desired.
