Turkey Lettuce Wrap Tacos

Ingredients
- Cooking spray
- 1 pound lean ground turkey or beef
- 1 cup favorite salsa, plus more for topping
- 1 (4-ounce) can diced green chiles
- 1 ½ teaspoons taco seasoning
- 1 (15-ounce) can corn, drained
- 1 (15-ounce) can black beans, drained and rinsed
- 1 head lettuce*
About ⅓ cup Cabot Lowfat Plain Greek Yogurt
- Sliced olives (optional)
Directions
- COAT large skillet with cooking spray. Add turkey or beef, salsa, chiles and taco seasoning to skillet and place over medium-high heat.
- COOK, breaking up meat with spoon, until meat is cooked through and no longer pink, about 8 to 12 minutes.
- REMOVE from heat and stir in corn and beans.
- CUT off stem at base of lettuce for lettuce wraps, then cut head in half lengthwise. Peel off individual leaves, then wash and pat dry.
- SCOOP about ½ cup meat into lettuce leaf for each wrap; top with dollop of yogurt, additional salsa, and olives if desired.
