Ingredients
- 1 12 ounce bag of tortilla chips
- 1 15 ounce can black beans, drained and rinsed
2 – 7 ounce packages of Cabot Vermont Sharp Cheddar Slices
½ cup Cabot Sour Cream
- 2 jalapeños, sliced
- 1 small red onion, chopped
- 1 medium tomato, chopped
- 3 scallions, sliced
- ¼ cup chopped cilantro
Directions
- PREHEAT oven to 400°F. Spray a baking sheet or oven-safe platter with nonstick spray. While the oven preheats, assemble the nachos.
PLACE half of the chips in a single layer onto the prepared baking sheet or platter. Top with half the black beans and arrange half of the Cabot Vermont Sharp Cheddar Cheese Slices in a single layer on top. Repeat layers with remaining chips, beans, and cheese.
BAKE until the cheese is melted, about 5 minutes. Top with Cabot Sour Cream, sliced jalapeños, chopped red onions, diced tomatoes, sliced scallions, and chopped cilantro, and serve immediately.
