Sweet, crunchy waffle fries topped with protein-rich black beans and tangy Cabot Seriously Sharp Shredded Cheddar Cheese are a winning appetizer for game day or any festive gathering. And they pack a nutritious punch!
Ingredients
1 - 20 ounce package frozen sweet potato waffle fries
1 - 15 ounce can black beans, drained and rinsed

1 - 8 ounce bag Cabot Seriously Sharp Shredded Cheddar, or Fiery Jack Shredded Cheese (2 cups)
- 2 medium Roma tomatoes, chopped
- â…“ cup chopped fresh cilantro
- 1 lime
Directions
BAKE a 20 ounce package of sweet potato waffle fries on a 13 x 18 inch baking sheet according to package instructions.
PREPARE the other ingredients while the waffle fries are baking.
- TOPÂ fries evenly with black beans, and shredded cheese. Bake an additional 5-8 minutes or until the cheese is melted.
- GARNISHÂ with chopped tomatoes, cilantro, and a squeeze of lime scattered evenly over the nachos.
