Buffalo Chicken Pita Pizzas
These Buffalo Chicken Pita Pizzas are perfect for when you can’t decide what to make for your next gathering. They’re not only sure to surprise your guests – they’ll get eaten up before you come back for seconds! The perfect combination of fluffy pita, spicy buffalo sauce, and creamy cheddar – this buffalo chicken recipe is easy to make and even easier to eat! To make this spin on a classic, we recommend starting with Cabot’s Extra Sharp Yellow Cheddar cheese, and adding your favorite buffalo sauce, a cooked rotisserie chicken, and of course – ranch or blue cheese dressing.
For this pita pizza recipe, start by gathering your ingredients and toppings, and preheat your oven to broil. Line a baking sheet with aluminum foil. Next, pull apart the rotisserie chicken into shreds. Dice the tomato and set aside.
Toast each side of the pita bread lightly by placing directly on the middle rack of your oven for 2 minutes on each side, or on a griddle for the same amount of time.
Transfer each toasted pita bread onto a baking sheet. Top each pita with buffalo sauce. Layer with diced tomatoes and shredded chicken, then top with shredded cheese. Broil the pizza on the top rack of the oven for 3-5 minutes until the cheese bubbles and is golden brown.
Remove the pizza from your oven, then drizzle each pizza with ranch or blue cheese dressing and serve. - 4 round pita breads
- 1 jar of buffalo sauce
- ½ of a cooked rotisserie chicken
- 1 medium tomato, diced
8 ounces Cabot Extra Sharp Yellow Cheddar, shredded, (about 2 cups)
- Ranch or blue cheese dressing
- PREHEAT oven to broil. Line a baking sheet with aluminum foil.
- PULL apart the rotisserie chicken into shreds. Dice the tomato. Set aside.
- TOAST each side of the pita bread lightly by placing directly on the middle rack of your oven for 2 minutes on each side, or on a griddle for the same amount of time.
