Heat sunflower seeds or chopped nuts in a small skillet over medium-high heat, stirring often, until seeds or nuts are slightly golden and fragrant. Remove from heat and set aside.
In a medium bowl, mash together the reduced-fat cream cheese, finely grated Cabot Mild Cheddar or Sharp Cheddar and finely grated carrots with a fork. Use a 1 teaspoon measuring spoon to scoop out small balls of the mixture and, with moistened hands, roll and shape the mixture into 1-inch balls. Roll each ball in the sunflower seeds or nuts. Serve with tomatoes or grapes, if desired.
