It makes 20 carrot energy balls, so you can make them on the weekend and have them available to conveniently grab and enjoy throughout the week. Heat sunflower seeds or chopped nuts in a small skillet over medium-high heat, stirring often, until seeds or nuts are slightly golden and fragrant. Remove from heat and set aside.


In a medium bowl, mash together the reduced-fat cream cheese, finely grated Cabot Mild Cheddar or Sharp Cheddar and finely grated carrots with a fork. Use a 1 teaspoon measuring spoon to scoop out small balls of the mixture and, with moistened hands, roll and shape the mixture into 1-inch balls. Roll each ball in the sunflower seeds or nuts. Serve with tomatoes or grapes, if desired.
