Meatballs are very easy to make, and our recipe for cheese-stuffed turkey meatballs is no exception—you should be able to cook up roughly four servings and prepare the spicy cheese dipping sauce in only 45 minutes or so. You can serve the meatballs on their own with the spicy dipping sauce, or you can make the meatballs and pair them with some freshly made pasta—either way, you’re going to end up with a truly satisfying meal that the whole family will love. Turkey meatballs with cheese are best when served immediately, fresh from the oven. So you should prepare these meatballs about an hour before you plan on serving them. While they do keep well, they taste best when hot—so do keep that in mind. For the turkey meatballs, you’ll need over a pound of ground turkey, some onion, an inch-long piece of ginger, two cloves of garlic, salt, pepper, turmeric, paprika, cilantro, Cabot Seriously Sharp Cheddar, an egg and a few cubes of Cabot Farmhouse Reserve Cheddar. For the spicy cheese dipping sauce, you’ll need a half-cup of lactose-free milk, three ounces of Cabot Seriously Sharp Cheddar, chili powder and a dash of paprika. When making the dipping sauce, remember to add the milk, cheese, chili powder and paprika into a saucepan for about 10 minutes over medium heat. You don’t want the cheese to burn, so keep stirring until the mixture is entirely smooth.

Ingredients

    Turkey Balls:

  • 1 package 1.25 pounds ground turkey
  • ½ onion, finely chopped
  • 1 inch piece of ginger, finely chopped
  • 2 cloves garlic, finely chopped
  • ¼ teaspoon salt
  • ½ teaspoon pepper
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • 2 teaspoons chopped cilantro
  • 2 ounces Cabot Seriously Sharp Cheddar, grated (about ½ cup)

  • 1 egg
  • Cabot Farmhouse Reserve Cheddar, cut into cubes

  • Spicy Cheese Dipping Sauce:

  • ½ cup lactose free milk
  • 3 ounces Cabot Seriously Sharp Cheddar, grated (about ¾ cup)

  • ¼ teaspoon chili powder
  • ¼ teaspoon paprika

Directions

    Turkey Balls:

    1. PREHEAT oven to 375°F.
    2. MIX all the ingredients together, except for the cubed cheddar.
    3. FORM the ingredients into balls, enclosing a cube of cheddar in the middle of each.
    4. BAKE at 375°F for 30 minutes.

    Spicy Cheese Dipping Sauce:

    1. PLACE milk, cheese, chili powder and paprika in a saucepan over medium heat for about 10 minutes. Stir frequently so cheese melts evenly.
    2. SERVE with turkey balls.
