Ingredients
4 ounces Cabot Cream Cheese
- 2 tablespoons confectioner’s sugar, or more to taste
½ cup Cabot Lowfat Vanilla Bean Greek Yogurt
1 cup King Arthur Unbleached All-Purpose Flour (fluffed with whisk before measuring)
- ½ cup stoneground yellow cornmeal
- 2 teaspoons baking powder
- ¼ teaspoon salt
- 1 cup sugar
¾ cup Cabot Lowfat Plain Greek Yogurt
- 3 large eggs
- ⅓ cup vegetable oil
- Freshly grated zest of 1 lemon
- 1 teaspoon pure vanilla extract
- 16 ounces strawberries, hulled and thinly sliced
- 3 tablespoons sugar
- 1 tablespoon fresh lemon juice

Directions
To make cream:
- COMBINE cream cheese and sugar in medium bowl; beat with electric mixer on high speed until smooth.
- ADD yogurt and beat on high speed, scraping down side of bowl, for about 1 minute until light and fluffy; cover and refrigerate until needed.
- To make cake:
- PREHEAT oven to 350°F. Coat 10-inch springform pan or 9-inch round cake pan with cooking spray and set aside.
- COMBINE flour, cornmeal, baking powder and salt in medium bowl; whisk together.
- COMBINE sugar, yogurt and eggs in large bowl; beat with electric mixer on high speed for one minute until pale and frothy. Beat in oil, zest and vanilla. Add dry ingredients and beat on low speed just until combined. Scrape batter into prepared pan, spreading evenly.
- BAKE for 20 to 25 minutes or until cake feels firm when pressed lightly in center. Let cool for about five minutes in pan, then remove and transfer to wire rack to cool completely.
To make strawberries:
ABOUT 20 minutes before serving, mix together berries, sugar and lemon juice; let stand until berries are very juicy. Serve each slice of cake with generous portion of berries and juice spooned over top and dollop of whipped yogurt cream.
