Grilled Peaches & Pimento Toasts

Directions

  1. HEAT grill to medium-high heat.
  2. DRIZZLE bread slices with olive oil and grill on both sides until toasted, about 1 – 2 minutes per side. Set aside.
  3. SLICE the peaches into ¼ inch slices. Drizzle with olive oil and grill on both sizes until caramelized slightly, about 1 – 2 minutes per side. Set aside.
  4. SLICE avocado into thin slices (about ⅛-inch).
  5. ASSEMBLE open-faced toasts by spreading each piece of bread with ¼ of pimento cheese spread. Layer 2 – 3 slices of avocado, and 2 – 3 slices of grilled peach. Sprinkle chopped basil, olive oil, and a pinch of flaky sea salt over the top of each toast.
