Ingredients

  • 1½ cups fresh corn kernels (from 2 medium ears corn)
  • 2 tablespoons fresh chopped cilantro
  • 1 tablespoon chili pepper, or more to taste
  • 1 teaspoon fresh chopped garlic
  • Pita or tortilla chips

Directions

  1. MICROWAVE corn kernels on high power until hot but still crunchy, stirring midway, about 1½ minutes. Spread out on plate and let cool completely (pop in freezer to speed things along).
  2. PLACE ½ cup of corn in blender and puree.
  3. SCRAPE pureed corn into small bowl and combine with remaining corn kernels, yogurt, cilantro, chili pepper, and garlic. (Dip can be prepared 1 day ahead and refrigerated.)
  4. SERVE with pita or tortilla chips, or crackers for dipping.
