Ready to make this savory meal? It’s surprisingly easy to prepare, making it a great dish for those especially busy days. Gather all your ingredients and begin by preparing pasta according to the package directions. Meanwhile, melt Cabot Unsalted Butter over medium heat and then add shallot and cook, stirring until it’s slightly softened. Make roux by sprinkling flour over the shallots and stir to dissolve flour into the butter. Whisk in milk until flour mixture is incorporated, then whisk in seasonings (chipotle chili, garlic powder, salt, and pepper). Turn heat up to medium-high and whisk constantly, bringing to a simmer and cooking until sauce is thickened. Remove from heat and stir in cheddar cheese until it completely melts into the sauce. In a large pot, stir together the hot cooked pasta, sauce, and chicken.
