Our air fryer southwest egg roll recipe is a bit of a healthier alternative to its deep-fried cousin. But what this recipe lacks in frying, it makes up in flavor! This cheesy appetizer is the perfect addition to any potluck or gathering. The spicy flavors, combined with creamy cheddar cheese pair perfectly. And don’t forget the cilantro lime dressing on the side – delicious enough to be eaten on its own! To make this air-fried quick cocktail party app, we recommend starting with Cabot’s Vermont Sharp Cheddar, and adding your favorite veggies, including red bell peppers, corn, and green onions. Add a hint of spice with some pickled jalapenos, and cool things down with our delicious Cabot's Sour Cream. These egg rolls will go fast, so make sure you set a few aside!


To make 10 southwest egg rolls, start by mixing together the red pepper, corn, beans, jalapeno, green onion, cheese, chicken, and spices in a large bowl.


Next, place one egg roll wrapper on a cutting board. Place 2 tablespoons of filling onto the wrapper and roll up according to package directions, sealing the edge with a little water. Repeat the entire process with the remaining filling and egg roll wrappers.


Place the egg rolls in an air fryer basket and spray the tops with cooking spray. Note that you will need to work in batches with the egg rolls. Set your air fryer at 370°F degrees and cook egg rolls for 8 minutes. Then flip the egg rolls and cook for an additional 4-6 minutes.


Lastly, make the dipping sauce: Add all ingredients to a mini food processor and process until smooth. You can also finely chop the cilantro and garlic, and combine with the sour cream and lime juice with a spoon.

Ingredients

    Egg rolls:

  • 1 red bell pepper, diced
  • 1 cup frozen corn kernels
  • 1 cup black beans, drained and rinsed
  • ¼ cup sliced green onions
  • 2 tablespoons minced pickled jalapenos
  • 1 cup cooked diced chicken breast
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 package egg roll wrappers (20 count)

  • Dipping sauce:

  • ½ cup cilantro
  • 1 lime (zested and juiced)
  • 1 clove garlic (peeled)

Directions

  1. MIX together the red pepper, corn, beans, jalapeno, green onion, cheese, chicken, and spices in a large bowl.
  2. PLACE one egg roll wrapper on a cutting board. Place 2 tablespoons of filling onto the wrapper and roll up according to package directions, sealing the edge with a little water.
  3. REPEAT the process with the remaining filling and egg roll wrappers.
  4. PLACE the egg rolls in an air fryer basket and spray the tops with cooking spray (you will need to work in batches).
  5. SET air fryer at 370°F degrees and cook egg rolls for 8 minutes. Then flip the egg rolls and cook for an additional 4-6 minutes.
  6. MAKE the dipping sauce: Add all ingredients to a mini food processor and process until smooth. (Or finely chop the cilantro and garlic, and combine with the sour cream and lime juice with a spoon.)
