Warm, creamy and cheesy - this baked ricotta dip will be a hit with family and friends. Put your own spin on it with optional add-ins or toppings.

Ingredients

  • 2 cups fresh Homemade Ricotta, or store bought

  • Salt and/or pepper to taste

  • Possible add-ins before baking: minced fresh garlic, harissa paste or hot sauce, honey, chopped fresh herbs, lemon zest, or olive oil

  • Optional toppings after baking: roasted cherry tomatoes, olives, nuts, fresh chopped herbs, roasted fruits like peaches, plums, cherries, or grapes, drizzle of honey or hot sauce, flaky sea salt, cracked fresh red or black pepper

Directions

  1. PREHEAT Oven to 400°F.

  2. SPRAY a 2-cup casserole dish or small cast iron skillet with cooking spray.

  3. SPOON the fresh ricotta in to the baking dish or skillet and top with your favorite Cabot shredded cheddar. If using any other optional add-ins, mix these with the ricotta before topping with the shredded cheese.

  4. BAKE for 25 minutes or until bubbly and golden.

  5. SPRINKLE with any optional toppings and serve with toasted crostini, crackers or fresh veggies.
