Looking for the perfect meal or snack for your camping trip? This Beer & Cheddar Fondue is easy to make and gets everyone gathered around the campfire or grill. Pack up your favorite dippers, light the fire or grill and get melting.
A small cast iron Dutch oven works well for this quick and easy fondue, but any heavy saucepan will work. The dippers are a big part of this fun recipe. Mix up the flavors and textures: sweet fruit, savory crackers or bread, tart pickles, crunchy veggies - or whatever are your favorites.

Ingredients

1 garlic clove, slightly crushed
- 4 tablespoons of cornstarch

2 cups of Cabot Alpine Cheddar, shredded
- 16 ounces of your favorite beer
- 1 tablespoon of Dijon Mustard

“Dippers” of your choice: fresh veggies, fruit, cooked meat, crackers, bread, chips, pretzels, chocolate, pickles
Directions
RUB the garlic clove all over the inside of the Dutch oven or sauce pan.
MIX the cornstarch with the cheddar.
PLACE the Dutch oven or pan on a grill or fire where there’s an even, low to medium heat. Add the beer and bring to a simmer.
ADD the cheddar slowly, a little bit at a time, while stirring. Add the mustard and continue to stir until all of the cheddar has melted and is nice and smooth.
MOVE the pan from the direct heat and place in an area where everyone can gather around and start dipping.

The fondue will stay warm for quite a while, especially in a cast iron pot, and can be reheated if necessary.
