To make two grilled cheese sandwiches, spread Cabot Unsalted Butter over one side of each of the 4 slices of bread. Then turn each of the bread slices over.
Slice both the Cabot Vermont Sharp Cheddar and Cabot Colby Jack Cheese very thin. Place the layers of Sharp Cheddar on 2 slices of bread. Follow with the artichoke hearts, fresh herbs, and Colby Jack Cheese as the third layer. Cover each sandwich with the other 2 slices of bread and press on the sandwich with a bit of pressure.
Preheat grill pan on medium heat. Brush the bread with melted Cabot Salted Butter and place sandwiches on the grill pan. Cover with the lid and cook on each side for 3-5 minutes, until cheese is melted. Enjoy!

- 4 slices of bread (your choice)

2 ounces Cabot Vermont Sharp Cheddar, thinly sliced

2 ounces of Cabot Colby Jack Cheese, thinly sliced

2 tablespoons of Cabot Unsalted Butter plus 1 tablespoon of melted Cabot Salted Butter
â…“ cup of quartered Reese Artichoke Hearts
- Fresh herbs (parsley, cilantro about 1-2 tablespoons, chopped)
Directions
SPREAD butter over one side of the 4 slices of bread. Turn the bread over.
SLICE both cheeses very thin and place the layers of Sharp Cheddar on 2 slices of bread. Follow with the artichoke hearts, fresh herbs, and Colby Jack Cheese as the third layer.
COVER each sandwich with the other 2 slices of bread and press on the sandwich quite hard.
- PREHEATÂ the grill pan on medium heat. Brush the bread with melted butter and place sandwiches on the grill pan and cover with the lid. Cook on each side for 3-5 minutes, until cheese is melted.
