ADD butter to a medium bowl and beat until smooth.

ADD shredded cheese and beat until combined. Then add granulated sugar and beat until combined.

ADD flour and salt and mix until ingredients are fully incorporated and a crumbly dough forms. Add chocolate chunks and mix to incorporate. The dough should come together in a ball that you can shape into a disc. Dust counter top and rolling pin with flour, then roll dough to ¼” thickness. Use a 2 ½” cookie cutter and cut out 16 cookies.

PLACE cookies in an airtight container and chill in the refrigerator for 1 hour.

PREHEAT oven to 350°F. Line a large(half sheet) baking sheet with parchment paper. Drop cookies onto the prepared baking sheet. Bake 12 cookies at a time on a half sheet pan, or 6 on a quarter sheet pan.

DROP cookie dough onto the prepared baking sheet using a 2 - 2.5 tablespoon cookie scoop.

BAKE for 15 minutes or until cookies are just golden brown. Cool for 20 minutes on baking sheet. Then transfer to cooling rack and cool completely.
