I scream, you scream, we all scream for…these refreshing, yummy key lime popsicles! Made with Cabot Lowfat Vanilla Bean Greek Yogurt, you don’t have to worry about snack over-indulgence with these cool treats. These yogurt popsicles are so good (and good for you), making them perfect for kids and adults alike. To make 10 key lime popsicles, you’ll need: 10 (5-ounce) paper cups, 10 wooden popsicle sticks, ½ cup graham cracker crumbs (divided), 1 cup Cabot Vanilla Bean Lowfat Greek Yogurt, 1(14-ounce) can sweetened condensed milk (regular, lowfat, or fat free), ¾ cup key lime juice (for extra tartness, use 1 cup), and grated lime zest. If you will be dipping the popsicles in chocolate, you will also need 2 cups of chocolate chips and 2 tablespoons of vegetable oil.

Begin by placing the 10 paper cups in a muffin pan (or a shallow baking dish). Spoon approximately ½ teaspoon graham cracker crumbs into the bottom of each cup. Then mix together the yogurt, condensed milk, and key lime juice in a large bowl. Divide this mixture among the cups (using an ice cream scoop for this part works well). Top each cup with another teaspoon of graham cracker crumbs and put in the freezer for 30 minutes. Once slightly firm, insert the popsicle sticks and then put back in the freezer until completely firm (about 3 hours).

To enjoy plain, remove pops from cups and dig in! For chocolate dipped key lime popsicles, melt chocolate chips in microwave (stirring until completely melted), stir in oil, and let cool a bit. Remove each pop from cup, dip in chocolate, and return to freezer for about 15 more minutes, until chocolate sets. Plain or covered in chocolate, these popsicles will be a hit!

  • ¾ cup key lime juice (or use 1 cup for extra-tart flavor)
  • 10 wooden popsicle sticks
  • Grated lime zest
  • 2 cups chocolate chips plus 2 tablespoons vegetable oil (optional)

Directions

  1. PLACE 10 cups in muffin pans or shallow baking dish. Spoon about ½ teaspoon graham cracker crumbs into bottom of each cup.

  2. MIX together yogurt, condensed milk and key lime juice in large bowl. With ice cream scoop, divide mixture among cups. Top each with about 1 teaspoon additional crumbs.
  3. PLACE in freezer for about 30 minutes to firm up slightly, then insert popsicle sticks.
  4. RETURN to freezer until totally firm, about 3 hours longer.
  5. To serve plain: REMOVE each pop from cup and sprinkle with additional crumbs and lime zest.

Recipe Tips
