Kimchi, a popular Korean main or side dish, is delicious on its own but is especially mouth-watering when served with grilled meats. And that combination is exactly what makes this kimchi burger recipe a winner. If you’ve never heard of kimchi, which consists of fermented napa cabbage, garlic, onions, chili paste, and daikon radish, you’ll be heading to the store to buy some more after making these burgers! To make three servings, combine 1 tablespoon each of sesame oil, Sriracha, and soy sauce in a small bowl and set aside. Shape beef into three patties.


After placing the patties on a medium-hot grill, brush them with the sesame oil mixture and cook for five minutes. Brush with the remaining mixture and continue cooking the patties for five minutes on each side, until they’re cooked as desired (cook for a minimum of ten minutes). Top patties with slices of Cabot Gouda Cheese (or any of your favorite Cabot cheddar cheeses), let cheese melt, and remove from grill.


In a small bowl, combine Cabot Lowfat Plain Greek Yogurt, ½ teaspoon soy sauce, and 1 tablespoon Sriracha. Spread the yogurt mixture over cut-side of top burger buns and place patties on bottom burger buns. Top with kimchi and bun tops and your burgers are ready to eat. Ingredients

  • 1 tablespoon sesame oil
  • 1 tablespoon Sriracha
  • 1 tablespoon soy sauce
  • 1 pound ground beef
  • 3 ounces sliced Cabot Gouda Cheese (or any Cabot cheddar cheese)

  • 2 tablespoons Cabot Reduced Fat Plain Greek Yogurt

  • ½ teaspoon soy sauce
  • 1 tablespoon Sriracha
  • 3 burger buns

  • ¼ cup mild kimchi
  • Fresh cilantro or parsley for garnish, if desired

Directions

  1. COMBINE first 3 ingredients in a small bowl.

  2. SHAPE beef into 3 patties.

  3. PREHEAT grill to medium-high.

  4. PLACE patties on grill and brush with sesame oil mixture. Cook 5 minutes and brush with remaining mixture. Continuing cooking patties 5 minutes per side until desired degree of done-ness (at least 10 minutes). Just before removing from grill, top with sliced cheese and let melt.

  5. COMBINE Greek Yogurt, ½ teaspoon soy sauce and 1 tablespoon Sriracha in a small bowl. Spread over cut-side of top burger buns. Layer patties on bottom burger buns. Add a few cilantro or parsley leaves, if desired. Top with kimchi and bun tops.
