Lemon Black Pepper Compound Butter

2 sticks Cabot Unsalted Butter, softened
Zest of 1 lemon
1 teaspoon lemon juice
1 teaspoon coarsely ground black pepper
1 teaspoon salt
Directions
MIX all ingredients together in a medium-sized mixing bowl.
PLACE butter mixture on a sheet of plastic wrap and shape into a log about 1½-inches in diameter.
CHILL butter log for one to two hours until mostly firm.
SERVE sliced butter rounds on top of fish, steaks, cooked vegetables or with bread or crackers.
