Ingredients

  • 1 cup whipping cream
  • 2 tablespoons granulated sugar substitute, such as erythritol (recipe was tested with Swerve, granular)
  • ½ teaspoon vanilla extract
  • 1 cup Cabot Lowfat Plain Greek Yogurt

  • 1 cup blackberries
  • ¼ cup pomegranate seeds

Directions

  1. COMBINE cream, sugar substitute and vanilla extract in a medium bowl.
  2. BEAT with an electric mixer on medium speed until stiff peaks form. Fold in yogurt.
  3. LAYER whipped cream mixture, blackberries and pomegranate seeds among parfait glasses
