Pimento Cheese Stuffed Olives

After you stuff olives with our delicious, made-from-scratch pimento cheese, you may just never want to eat your olives any other way. For 12 servings, you’ll need 12 Colossal or large garlic stuffed olives and all of the ingredients to make the pimento cheese: 8 ounces grated Cabot cheese (Extra Sharp Cheddar, Seriously Sharp Cheddar, Farmhouse Reserve White Cheddar, or Alpine Cheddar), Cabot Lowfat Plain Greek Yogurt, mayonnaise, diced pimentos, salt, black pepper, and sugar. Mix all the ingredients for the pimento cheese in a bowl until everything is well blended.
Remove the garlic from the olives and carefully fill olives with the pimento cheese using a teaspoon or other small pointed spoon. If necessary, wipe the olives with a paper towel and arrange on serving plate.

- Pimento Cheese

8 ounces Cabot Cheddar (Extra Sharp, Seriously Sharp, Farmhouse Reserve, or Alpine), grated (about 2 cups)

¼ cup Cabot Lowfat Plain Greek Yogurt
- ¼ cup mayonnaise
- 2 ounces diced pimentos
- ⅛ teaspoon salt
- ⅛ teaspoon black pepper
- ⅛ teaspoon sugar
For the Pimento Cheese:

- MIXÂ all the ingredients in a bowl until pretty well blended.
- REMOVEÂ the garlic from the olives and set aside for use in other recipes. Using a teaspoon or other small pointed spoon carefully fill the olives with the Pimento Cheese. If necessary, wipe the olives with a paper towels and arrange on serving plate.
