Melt-y, cheesy and full of healthy vegetables, this dip will be the first to disappear at your next party. This classic recipe takes a healthy twist by using Cabot Plain Greek Yogurt instead of mayonnaise (choose our Reduced Fat or Whole Milk Yogurt) and packs in 13g of protein per serving. Simply mix up the veggies, half the shredded Cabot Vermont Sharp Cheddar cheese, yogurt, chopped green onions and pepper flakes. Then pour into a shallow baking dish, top with remaining cheese and bake in a 375°F oven for 20 minutes. Brown the top under the broiler for a couple minutes until golden and bubbling. Serve it hot with toasted French bread, crostini or hearty crackers. The crowd will go wild!

Directions

  1. PREHEAT oven to 375°F.

  2. COMBINE spinach, artichokes, 1 cup of shredded cheese, yogurt, green onions, chili flakes. Season with salt & pepper to taste, and mix until thoroughly combined.

  3. POUR mixture into baking or gratin dish and top with the remaining cup of cheese.

  4. BAKE for 20 minutes, then turn on the broiler. Broil until top is golden brown. Garnish with chopped green onions if desired. Serve hot and bubbling, with crusty French bread, crostini or hearty crackers.
