Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 8 medium flour tortillas
  • 1 16-ounce can refried beans
  • 1 10-ounce can enchilada sauce
  • 8 ounces Cabot Habanero Cheddar or Pepper Jack Cheese, shredded (about 2 cups)

  • Cooking spray
  • Toppings:

  • Cabot Sour Cream

  • Fresh tomatoes, diced
  • Green onions, sliced
  • Black olives, sliced

Directions

  1. BROWN and crumble the ground beef in a large skillet with the taco seasoning.
  2. SPRAY the air fryer basket with cooking spray.
  3. PLACE one tortilla in the air fryer basket and spread with a layer of refried beans. Top with the ground beef mixture and a sprinkle of cheese.  Place another tortilla on top. Spoon about 2 tablespoons of the enchilada sauce on top.  Sprinkle some shredded cheese on top of the sauce.
  4. SET the air fryer to 370°F and cook for 4-5 minutes.
  5. REPEAT with the remaining tortillas and fillings. (You can keep the finished pizzas warm in the oven on a baking sheet until ready to serve.)
  6. SERVE with desired toppings.
