To make 4 grilled burgers, preheat your grill to high. Gently combine the ground beef, horseradish, Dijon mustard, salt and pepper in a medium bowl. Shape the mixture into four ¾-inch-thick burgers.
Next, brush the red onion slices lightly with olive oil. Brush the grill with a wad of paper towels dipped in oil to prevent sticking. Place burgers and onion slices on the grill and cook burgers to desired degree of doneness, about 4 minutes per side for medium rare. Cook the onions until browned, about 4 to 5 minutes per side. Toast the sourdough bread lightly.
Top the burgers with Cabot Sharp Cheddar cheese or Cabot Sharp Cheddar Cracker Cuts and cover with grill lid or foil until the cheese is melted, approximately 1 minute. Serve on lettuce-topped bread, garnished with grilled onions separated into rings.

- PREHEAT grill to high.
- COMBINE the ground beef, horseradish, Dijon mustard, salt and pepper in a medium bowl, stirring gently.
- SHAPE the mixture into four ¾-inch-thick burgers.
- BRUSH the red onion slices lightly with olive oil. Brush the grill with a wad of paper towels dipped in oil to prevent sticking.
- PLACE burgers and onion slices on the grill and cook burgers to desired degree of doneness, about 4 minutes per side for medium rare. Cook the onions until browned, about 4 to 5 minutes per side. Toast the sourdough bread lightly.
