Ingredients
- 1 (15-ounce) can no sodium or low sodium black beans, rinsed and drained
- 1 ½ cups finely diced fresh pineapple
- 1 avocado, peeled and diced
- 1 cup halved grape tomatoes or quartered cherry tomatoes
- ½ jalapeno pepper, seeds removed and finely diced
- ½ cup defrosted frozen corn kernels
- ½ cup sliced green onions (about 2)
- ½ cup roughly chopped fresh cilantro leaves
- 2 tablespoons fresh lime juice (about 2 small limes)
- ¼ teaspoon salt
Directions
COMBINE all ingredients, in a medium bowl. Use immediately or refrigerate until ready to serve.
