Ingredients

  • 1 (15-ounce) can no sodium or low sodium black beans, rinsed and drained
  • 1 ½ cups finely diced fresh pineapple
  • 1 avocado, peeled and diced
  • 1 cup halved grape tomatoes or quartered cherry tomatoes
  • ½ jalapeno pepper, seeds removed and finely diced
  • ½ cup defrosted frozen corn kernels
  • ½ cup sliced green onions (about 2)
  • ½ cup roughly chopped fresh cilantro leaves
  • 2 tablespoons fresh lime juice (about 2 small limes)
  • ¼ teaspoon salt

Directions

  1. COMBINE all ingredients, in a medium bowl. Use immediately or refrigerate until ready to serve.
