Oven-Roasted Grape Tomatoes

- 1 tablespoon olive oil
- 1 tablespoon rice vinegar
- 2 teaspoons dried thyme leaves
- ½  teaspoon garlic powder
- 1 pound grape tomatoes
- Salt and ground black pepper to taste
4 teaspoons Cabot Lite50 Sharp Cheddar, grated
Directions
- PREHEAT oven to 400ºF.
- WHISKÂ together oil, vinegar, thyme and garlic powder in large bowl; add tomatoes, tossing gently to coat.
- POURÂ onto baking sheet or sheets, distributing in single layer.
- BAKEÂ for 15 minutes, shaking pan midway to redistribute tomatoes.
- REMOVEÂ from oven and season with salt and pepper. Sprinkle with cheese and serve.
