Ingredients

  • 22 ounce package Waffle Fries
  • 1 tablespoon vegetable oil
  • 1 pound ground beef
  • 4 tablespoons (or 1 envelope) taco seasoning
  • ¾ cup water

Directions

  1. BAKE waffle fries according to the directions on the package on a baking sheet lined with parchment paper.
  2. COOK the taco meat while the oven is preheating for the waffle fries. Heat the oil in a large skillet until hot but not smoking. Brown the ground beef, breaking the meat up into small pieces as it cooks. Drain off any fat, then add the taco seasoning, stirring to combine and allow to cook for 2 minutes. Mix in the water and cook until the water has mostly evaporated and a thick sauce is left behind.
  3. TOP waffle fries with taco meat and cheese, scattering the meat and cheese evenly over the waffle fries. Bake an additional 5-8 minutes until the cheese is melted.
  4. GARNISH with dollops of sour cream, scallions, and guacamole.
