Ingredients
- 1 tablespoon olive oil
- 1 small onion, diced
- 1 teaspoon minced garlic
- 1 teaspoon chili powder
- ¼ teaspoon ground cumin
- 2 cups diced tomatoes (fresh or canned)
- 1 cup low-sodium veggie or chicken broth
- 1½ teaspoons fresh lime juice
- ¼ cup chopped fresh cilantro
Directions
In medium saucepan, sauté over medium heat, heat oil; add onion, garlic, chili powder and cumin in olive oil and cook, stirring, until tender.
Puree mixture in blender or food processor. Return to saucepan and season to taste with salt; simmer sauce until reduced by about one fourth.
