Directions
- PREHEATÂ a griddle or a large skillet to medium heat. Spray lightly with cooking spray. Preheat oven to broil.

COOK the zucchini rounds on each side in skillet for 2 - 3 minutes and set aside.
- LINEÂ a baking sheet with aluminum foil and lay out each zucchini round atop the foil. Top with a teaspoon of marinara sauce followed by a few sausage crumbles and a generous sprinkling of shredded cheddar cheese.
- BROILÂ on the top rack of oven for 5 minutes, or until cheese is melted and is lightly browned.
- GARNISHÂ with chopped parsley. Serve with extra marinara sauce on the side for dipping.
