Directions
- PREHEAT oven to 425°F. Coat large casserole dish with cooking spray.
- PLACEÂ cauliflower and onion in large microwave-safe bowl and cover with plastic wrap. Microwave for about 5 minutes to steam and soften slightly. Alternatively, simmer vegetables in water on stovetop for several minutes until slightly softened; drain.
- MIXÂ egg white, yogurt, tomato or pizza sauce, Parmesan and seasonings together in a medium bowl.
- ADDÂ cauliflower, onion and chicken to sauce mixture; pour into prepared baking dish. Top with cheddar and cover with foil.
- BAKEÂ for 30 minutes. Uncover dish and bake for an additional 5 to 10 minutes or until cheese is lightly golden brown.
